This is my favourite recipe and my go-to dessert. It’s simple and delicious to make!
INGREDIENTS FOR LOAF
- 1.5 cups flour
- 1 teaspoon salt
- 1 cup sugar
- 1 zested lemon peel
- 1 tablespoon baking powder
- 0.5 cup whole milk
- 2 eggs, beaten
- 0.5 cup butter
- Juice of 1 lemon
- 0.5 teaspoon of vanilla
INGREDIENTS FOR GLAZE
- Juice of 1 lemon
- 0.25 cup sugar
1. Grate the lemon. Seriously. Grate it before you juice it as well or learn the hard way2. Pre-heat the oven to 350 degrees and grease a 9×5″ loaf pan3. Whisk the flour, salt, sugar, lemon peel and baking powder in a large bowl.
4. Beat the eggs, milk, butter, lemon juice and vanilla
5. Mix the wet ingredients into the dry ingredients
6. Bake about 45m or until a knife comes out clean
7. Mix the lemon juice and sugar in a saucepan over low heat until the sugar is melted
8. Once the loaf is baked, slice holes into the crust and pour the glaze over top
TIPS
When measuring ingredients like butter, margarine or lard, use the density method! Pour a cup or two of water into a measuring cup and add your butter until the water level rises to the your original level plus what you need to measure out. For example, while measuring 0.5 cups of butter, I poured 2 cups of warm water and added butter until the water level rose to 2.5 cups. An added bonus is that the butter was already melty when I was done measuring!
If you don’t have anti-stick pans or non-stick cooking spray, take a paper towel and use it to spread margarine or butter all over your pan.
